Morning prep for a day of trail adventure at Mt Rogers & Grayson Highlands

A tasty table is always a great start

Blueberry, Ginger, Cashew Rice Cakes
Baked Rice Balls: Ham Bacon Pineapple and Sweet Potato Bacon
(from Feed Zone Portables)
Hard Boiled Eggs
Roasted Potatoes rolled in parmesan and salt
Baked Eggs with bacon and cheese

All of this portions and packs well for ride, run or hike.
We used the basic baked rice ball recipes from Allen Lim’s book. Bacon and liquid aminos were added to the ham and pineapple. Sweet potato and bacon were per recipe.

Of course any good adventure starts with Carrboro Coffee Roasters. Who said good coffee and endurance endorphins were addictive anyway.
